Corned
Beef with Apple Barbecue Glaze
4 to 5 pounds corned beef
brisket
1 cup applesauce
1/4 cup brown sugar, packed
1/2 cup thick barbecue sauce
Cook corned beef as directed on
package label since some is oven
roasted, or as follows: remove
plastic wrapper from brisket;
rinse meat well in cold running
water. Place brisket in large
Dutch oven or pan with close
fitting lid. Cover with cold
water. Bring water to simmering
temperature, cover. Allow meat
to simmer gently (do not boil)
until it is fork-tender, 3 to 3
1/2 hours. Drain hot cooked
corned beef and place, fat side
up, in shallow baking pan.
Combine applesauce, barbecue
sauce and brown sugar in bowl;
mix. Spoon 1/4 cup of sauce over
top of corned beef. Place in 400
degrees oven for 15 minutes.
Spoon additional 1/4 cup of
sauce over corned beef; return
to oven for 15 minutes longer.
Serve remaining sauce with
corned beef and potato pancakes.
Serves 6 to 8.
Corned Beef Hash
1 (12 ounce) can corned beef
4 medium white potatoes
1 small onion
Empty canned corned beef into
10-inch skillet. Peel potatoes,
dice and boil slowly until done.
Chop up onion and add to corned
beef. Mix well. Just cook corned
beef on low heat about 15
minutes. Drain potatoes and
reserve juice. Add potatoes to
corned beef and add enough
potato juice until desired
consistency, not dry, not too
moist. Serve with garlic bread
and cole slaw.
Susie's Corned Beef and
Cabbage
1, 3 lbs., corned beef
1 to 2 cups small carrots
4 red skinned potatoes, cut in
half
1 small head cabbage
2 to 3 cups water
Rise off carrots putting in the
bottom of the Crock Pot and
cutting the potatoes in half
then put them in the bottom of
the Crock Pot. Add the water.
Sprinkling half of the spice
pack on the vegetables. Rise off
corned beef putting it in the
Crock Pot on top of the
vegetables then sprinkling the
rest of the spice pack on the
corned beef. About an hour
before you want to eat get out
of the Crock Pot as much liquid
that you need to cook the
cabbage. If you can't get enough
liquid then add some water. Cut
the cabbage into quarters. Add
to hot liquid and cook until
tender.
